We are seeking a salaried Sous Chef to join our Food and Beverage team at Toppers Tavern located at Eagle Ridge Golf Club in Summerfield, Fl. Salary Range:$43,000

Job Description:
Assists in direct supervision of culinary staff, food production, scheduling, training, maintaining quality standards and food cost control so as to create quality food products.

Duties & Responsibilities:

• Assists in managing all operating expenses, sets margins and manages against projections.
• Adheres to control procedures for cost and quality such as food production, inventories, and standardized recipes.
• Ensures all recipes are followed and prepared on a consistent basis.
• Monitors and checks the maintenance of all kitchen equipment daily.
• Maintains and implements daily food prep lists.
• Maintains and directs a quality sanitation program.
• Assigns duties to associates for efficient operation in the kitchen.
• Trains and supervises staff in proper preparation of menu items and operation of equipment.
• Assists in developing ongoing training programs.
• Ensures proper receiving, storage (including temperature setting) and rotation of food products to as to comply with health department regulations.
• Assists in management of department members.
• Incorporates safe work practices in job performance.
• Regular & reliable attendance.

Degree/Licenses:
Certificate from college, technical school or accredited facility or 6-12 months related experience and/or training; or equivalent combination of education and experience.
