JOB SUMMARY:
This person is responsible for properly preparing, cooking, baking, and storing food items that are prepared in advance to establish consistent yields and food quality. He/she shall prepare all food items and serve quality food to our guests in a friendly and helpful manner in accordance with Parkhurst Dining recipes, standards and procedures under strict sanitary conditions following ServSafe and HAACP guidelines.
ESSENTIAL FUNCTIONS
- Prepare food according to Parkhurst recipes and enforce the “batch” cooking method.
- Ensure the quality of the food produced and maintain the quality and quantity of food throughout the service period, utilizing production sheets.
- Cut, weigh, and prepare food items following company procedures and recipes. Follow exact portion specifications.
- Rotate refrigerated products and dry good products in accordance with company-approved policies and procedures, always using the FIFO method.
- Maintain the proper temperatures for all foods and coolers and freezers.
- Wrap, label, date and store all food items properly to maintain freshness and quality under strict sanitary guidelines.
- Complete product cooling charts.
- Always maintain a clean and neat appearance and practice proper personal hygiene.
- Frequently and correctly wash hands whenever possible.
- Complete daily production sheets.
- Distribute all products to proper areas of service.
- Maintain an open line of communication with management, informing them of products and supplies needed.
- Follow cleaning schedules as provided by management, using the “clean as you go” technique.
- Assist fellow employees at every opportunity possible to ensure guests are always completely satisfied.
- Perform any other duties as assigned by management.
- Assist in other kitchen areas when needed and asked by fellow employees and management.
