Position Summary: The Commissary Supervisor position is responsible for working with the Commissary Manager cooking and preparing large volumes of food for use at our restaurants and events and overseeing production duties of other staff in the Commissary.
Responsibilities:
- Practice and train staff on safe food handling and cleanliness up to Bear’s standards at all times.
- Ensure that proper Bear’s recipes, portioning & preparation standards are met on a regular basis.
- Responsible for controlling proper food rotation, cooking quantities and maintaining proper inventory levels
- Oversight of and responsible for consistent food quality
- Read and interpret all specialty catering orders on a weekly basis to independently assess inventory levels and produce specialty items as needed
- Develop and maintain cleaning schedules with Commissary Manager
- Communicate with other team members and managers to ensure accuracy and guest satisfaction.
- Maintain cleanliness of food preparation areas including cooking line, cold prep areas, walk-in coolers, delivery vehicles
- Maintain a clean, organized work area at all times.
- Operate and participate effectively in a team environment.
- Perform at least 5 shifts per week with remaining time consisting of training and administrative duties
- Participate in weekly BRG management meetings and internal meetings as required.
- Increase workload during busy times (leading up to holidays, events, summer)
Requirements: Must be 18 years old and candidate must be able to:
- Maintain a high degree of pace and intensity for an extended period of time while performing with quality and accuracy.
- Withstand exposure to possible food allergens including but not limited to; meats, fish, nuts, dairy, and oils
- Withstand exposure to and work with cleaning chemicals.
- Demonstrate basic understanding of equipment operations and ability to troubleshoot and perform maintenance using basic hand tools and cleaning equipment.
- Lift up to 60lbs constantly.
- Lift from floor to shoulder constantly and overhead infrequently.
- Twist, reach, & bend frequently.
- Listen to and comprehend instructions from Leads, Managers, and coworkers over background restaurant and equipment noise constantly.
- Frequently wash hands.
- Adhere to early morning schedule and be on time for shifts.
- Work independently with little supervision.
- Adhere to company uniform and appearance policy. Skills/Qualifications of Ideal Candidate:
- High School degree or equivalent preferred
- At least 4 years experience in Restaurant or related Foodservice concept in a Management capacity
- Servsafe Certified preferred.
- Good communication skills, friendly and polite demeanor.
- Strong knowledge of commonly-used concepts, practices, and procedures in a restaurant.
- Strong interpersonal skills; team player.
